Summery Turkey Bolognese

A lighter and cheaper version of a family classic. Try serving with grated courgette or butternut squash instead of spaghetti for a healthy and gluten free alternative and extra boost of veg.


Makes approximately 4 servings

Preparation time is approximately 10 minutes

Cooking time is approximately 25-30 minutes


Ingredients


1 tablespoon of olive oil

500g turkey thigh mince

1 celery stick, sliced

1 white onion, diced

1 red pepper, chopped

1 yellow pepper, chopped

1 garlic bulb, peeled and crushed

1 tablespoon of tomato puree

1 can tinned tomatoes with herbs

200ml water

Handful of torn mozzarella cheese (optional)


How to make Summery Turkey Bolognese

  1. Heat olive oil in pan. Gently cook onion, garlic and celery until golden.

  2. Add turkey mince and cook until brown. Add red and yellow peppers and cook for further 2-3 mins.

  3. Add tomato puree, tinned tomatoes and water. Season with salt and pepper and gently simmer for 25 mins.

  4. Served with spaghetti (or grated courgette/butternut squash), grated mozzarella cheese and salad.

 

HINTS & TIPS


The turkey bolognese is ideal for freezing! Why not batch cook some so you have a quick solution another day?
