Simple vegetable couscous

Quick cook easy dish

Prep: 10 min

Serves 4


Ingredients

200g couscous

Courgette, spinach mushrooms, onion, peas, green

beans, sweetcorn, (fresh or frozen any vegetables can be used)

Bag of wholemeal cous-cous

Any fresh or dried herbs

Garlic peeled and finely chopped.

Water or stock cube


How to make this simple dish

Chop vegetables into bite size pieces.

Slice and chop onions

Heat a little oil in a frying pan, add and gently fry the onions for 3-5 mins.

Add in remaining vegetables and continue to gently fry with the onions until cooked

In the meantime, boil the kettle

Tip the couscous into a heatproof bowl and pour over the hot water or stock.

Cover with cling film or a lid and leave for 5-10 mins until the couscous is soft.

Fluff the couscous up with a fork and season with a little salt and pepper if you only used water.

If you used stock just add pepper.

Stir in the cooked vegetables and serve.


Tips and Hints

Leftovers can be eaten for lunch

A good alternatives to potatoes and pasta

Adding in either canned beans such as kidney, chickpea or lentils will make a filling meal

Adding in about 300 g of minced meat is also a filling meal.
