Simple Carrot Soup

Makes approximately 6 servings

Preparation time is approximately 10 minutes

Cooking time is approximately 40 minutes





ingredients


1 large onion, chopped

8 carrots ( about 500g ) scrubbed and chopped

1.2 litres vegetable stock

100g soft cheese

Pinch of black pepper




How to make your Simple Carrot Soup

  1. Put the onion and carrots into a large saucepan, then pour in the stock.

  2. Bring to the boil, reduce the heat, partially cover, and simmer for about 25 minutes, until the carrots and onion are soft.

  3. Use a stick blender to puree the mixture ( take care as soup is HOT )

  4. Add half of the soft cheese and blend again until cheese is mixed in.

  5. Reheat gently and then serve, topped with the remaining cheese and a pinch of black pepper.

Enjoy with a slice or two of wholemeal bread.

This recipe is great for batch cooking!


'Lighten up' remove the soft cheese and serve with wholegrain bread
