A perfect way to introduce your family to more vegetables using this family classic.
Makes approximately 4 servings
Preparation time is approximately 5 minutes
Cooking time is approximately 45 minutes
Ingredients
2 tablespoons of olive oil
450g packet of sausages
500g peeled and chopped butternut squash (or frozen which is already prepared)
2 red onions, quartered and sliced
3 eggs
100g plain flour
1 tablespoons of mustard
1 tablespoon of salt
250ml milk
How to make sausage & squash toad-in-the-hole
Preheat the oven to 200C.
Pour the oil into roasting tray and brush sides to grease. Add the sausages, squash and onions and cook for 15 mins.
Meanwhile make a batter. Put the eggs, flour, mustard, salt and milk in a large mixing bowl and whisk.
Turn the squash, onions, and sausages. Carefully pour in the batter and cook for 30 more mins until batter has fluffed up, golden and shrinking away from the sides of the roasting tin. Slice into wedges, serve with broccoli, peas, and gravy.
HINTS & TIPS
To make a really good Toad-in-the-hole, get the batter into a very hot roasting tray and back into the oven as quickly as possible. Don't open the oven again until it's time to take it out.
