This one pot dish is easy to put together and packed with colourful vegetables. A great way for kids to discover new flavours.
Makes approximately 4 servings
Preparation time is approximately 15 minutes
Cooking time is approximately 45 minutes
12 good quality pork sausages (gluten free if necessary)
2 tablespoons of olive oil
1 white onion, roughly chopped
1 garlic clove, peeled and crushed
2 sticks of celery, sliced
3 large carrots, peeled and sliced
1 teaspoon of tomato puree
1 can tinned tomatoes and herbs
500ml chicken stock (gluten free if necessary)
1 tin of butter beans
2 handfuls of curly kale (stalks removed), roughly chopped
How to make Sausage, Butter bean & Kale Stew
Preheat oven to 200C.
Heat 1 tablespoon of olive oil in casserole dish and brown sausages. Remove from pan.
Add 1 tablespoon of olive oil to dish and gently cook onions, garlic, celery and carrots until onion is golden.
Add tomato puree, tinned tomatoes and chicken stock and stir.
Add butter beans, kale and browned sausages. Season with salt and pepper.
Put in lid on casserole dish and bake in the oven for 45 mins.
