This quick and easy dish uses up veggies in the fridge and provides a comforting and family meal.Â
Makes approximately 4 servings
Preparation time is approximately 10 minutes
Cooking time is approximately 25-30 minutes
Ingredients
8 pork sausages (not frozen)
1 tablespoons of olive oil (or other oil)
2 onions, chopped (red or white)
3 medium carrots, peeled & diced
2 medium parsnips, peeled & diced
1 tsp clear honey
1/2 orange, zested & juiced
1 sprig of rosemary or 1 teaspoon dried mixed herbs
How to make your sausage and vegetable bake
Preheat the oven to 200C.
Mix together the oil, onions, carrots & parsnips and place on large baking tray. Roast for 10 mins, stir and add the sausages for a further 10 mins.Â
Mix together the honey, orange juice and zest and drizzle over the sausages. Sprinkle over the rosemary or dried herbs.
Roast for a further 15 mins or until the sausages are cooked through.Â
HINTS & TIPS
Zesting is the grated peel of the outside of the orange. Any root vegetables or peppers can be cut into large chunks and added to this dish. It can be made without the sausages and/or cooked in a pan with canned tomatoes and mixed beans if an oven is unavailable.
'Lighten up' by not adding the honey mix, it will still be a hearty meal!
