A great family dinner and a lighter option than a beef burger. Great served with home-made sweet potato wedges and sweetcorn.
Makes approximately 4 servings
Preparation time is approximately 10 minutes
Cooking time is approximately 15 minutes
Ingredients
1 tablespoon of olive oil
400g pack of lean pork mince
1 white onion, finely chopped
1 apple, peeled and grated
2 cloves garlic, crushed
1/4 teaspoon of chilli powder
1 teaspoon vegetable stock
Handful coriander, roughly chopped
Salt & pepper
How to make Pork and Apple Burgers
Heat oven to 190C.
Heat oil in frying pan and heat to medium heat. Add the onion, apple and garlic and cook for a few minutes and set aside.
In a mixing bowl add the pork mince, cooled onion mixture, coriander, salt and pepper, chilli powder and vegetable stock powder. Mix and shape into 4 burgers. Chill in fridge to firm up.
Heat more oil in frying pan and cook burgers over medium heat on both sides until browned. Transfer to ovenproof dish and bake for a further 10 mins. Serve with lettuce and a bun.Â
