Simple and easy dessert using tinned or fresh pineapple.
Makes approximately 2 - 4 servings
Preparation time is approximately 5 minutes
Cooking time is approximately 5 - 10 minutes
Ingredients
1 large tin of pineapple rings or chunks
1 teaspoon of cinnamon
2 tablespoons of honey
Vanilla ice-cream
Sprigs of mint (optional)
How to make Poached Pineapple
1. Drain the pineapple and put the juice aside. 2. Add the chunks or rings to a pan with two tablespoons of pineapple juice or water. 3. Add the cinnamon and honey. 4. Mix and simmer on a medium heat for 5-10 minutes. Serve with ice-cream and a sprig of mint (if using).
HINTS & TIPS
'Lighten up' Pineapple is a excellent fruit with its own natural sweetness, using a tinned version in water is a great substitute. When making this recipe leave out the honey or try and reduce by as much as you can, 1/2 a tablespoon instead of the amount in the recipe. Cinnamon is also a lovely warm sweet spice adding in a little extra will do no harm. Serve with low fat yogurt as a dessert
