Pea and Dill Soup

Makes approximately 4 servings

Preparation time is approximately 2 minutes

Cooking time is approximately 10 minutes




ingredients


1/2 onion, roughly chopped

2 gloves of garlic, roughly chopped

300gms frozen peas

1/2 bunch of dill

2 tablespoons of cream (or can use milk or milk alternative)

Cooking oil (Olive or rapeseed)

100gms feta cheese (optional)

Sesame seeds (optional)


How to make your Pea and Dill Soup


1. Fry the onion and garlic together for 3 minutes with a tablespoon of oil in a frying pan.

2. Add the frozen peas, a small pinch of salt and fry them together for another 3 min to defrost the peas.

3. Add enough water (2-3 cups) to cover the peas and leave to simmer for 3 min.

4. Turn off the hob, add the dill, 2 tablespoons of cream and blend the soup with hand blender. (A potato masher will work, if not).


After you have poured the soup in the bowls, add some crumbled feta cheese, sesame seeds and a little olive oil, if you wish.

Enjoy with a slice or two of wholemeal bread.
