Thank you Harman for your hidden veg pasta Twenty20 recipe. This sauce is easy to make, contains hidden vegetables, and can be used a base for all sorts of recipes!
Makes approximately 4 servings
Preparation time is approximately 10 minutes
Cooking time is approximately 25 minutes
Ingredients
2 tablespoons of olive oil
2 cloves garlic, grated
1 large carrot, chopped
1 pepper, chopped and grated
400g tin of chopped tomatoes
1 tablespoon basil
1 tablespoon of oregano
500g of pasta (gluten free if necessary)
Salt & pepper
How to make your Hidden Veg PASTA
Add the tomatoes, garlic and herbs into a frying pan. Add salt & pepper. Fry on a medium heat for 10 minutes.
Chop all the veggies and add to a saucepan containing boiling water and cook for a few minutes. Add to the tomatoes.
Add the pasta to a saucepan of salted boiling water and cook for 10 minutes. Strain when cooked.
Blend the sauce in a processor or with a hand blender. This helps to hide the veg!
Add the sauce to the pasta and serve.

'Lighten up' use wholemeal pasta
Make double of the sauce and freeze for another day. If you freeze in smaller portions, you can have it handy if you need to do a quick meal for one!
