Turn your kids into cooking enthusiasts with this quick and easy noodle recipe that Dorcas prepared for her Twenty20 Challenge. Tasty meals don't get much quicker than this! We love one pot cooking too - saves on the washing up!
Makes approximately 4 servings
Preparation time is approximately 5 minutes
Cooking time is approximately 15 minutes
Ingredients
6 - 8 chicken thighs, chopped
1 pack of rice noodles
Chilli powder
Oil
Onion, chopped
Courgette, sliced
Cabbage, sliced
Green beans
Cherry tomatoes
1 carrot
2-3 tablespoon of soy sauce
Chicken seasoning (salt, pepper and mixed herbs)
How to make CHICKEN PANCIT Noodles
Heat oil in frying pan, when it's very hot, add chicken thighs and cook until browned (we'd suggest coating in cornflour to keep the flavour in). Season.
Add the rice noodles, the chopped vegetables and the chilli powder and soy sauce.
Add water to cover the noodles and put the lid on. Reduce to a low heat.
Cook for 10 - 12 minutes until noodles are cooked. Add the cherry tomatoes.
Serve and enjoy!
