Hidden Veg Pasta
Thank you Harman for your hidden veg pasta Twenty20 recipe. This sauce is easy to make, contains hidden vegetables, and can be used a base for all sorts of recipes! Makes approximately 4 servings Preparation time is approximately 10 minutes Cooking time is approximately 25 minutes Ingredients 2 tablespoons of olive oil 2 cloves garlic, grated 1 large carrot, chopped 1 pepper, chopped and grated 400g tin of chopped tomatoes 1 tablespoon basil 1 tablespoon of oregano 500g of pasta (gluten free if necessary) Salt & pepper How to make your Hidden Veg PASTA Add the tomatoes, garlic and herbs into a frying pan. Add salt & pepper. Fry on a medium heat for 10 minutes. Chop all the veggies and add to a saucepan containing boiling water and cook for a few minutes. Add to the tomatoes. Add the pasta to a saucepan of salted boiling water and cook for 10 minutes. Strain when cooked. Blend the sauce in a processor or with a hand blender. This helps to hide the veg! Add the sauce to the pasta and serve. HINTS & TIPS You could also use our Hidden Versatile sauce for this recipe! 'Lighten up' use wholemeal pasta Make double of the sauce and freeze for another day.
