Hidden Veg Beef Burgers

Who needs a takeaway when you can make your own delicious burgers? These are ideal for freezing too so make a batch and pop some in the freezer and you’ll have another meal ready for when time is short. Makes approximately 12-18 burgers (depending on size) Preparation time is approximately 10-15 minutes Cooking time is approximately 15-20 minutes Ingredients 500g beef mince 1 onion, chopped Fresh parsley, chopped 1 carrot, grated 1 courgette, grated Salt and pepper (1 teaspoon of each) 1 teaspoon of smoked paprika Crushed chilli (optional) Tomato puree (optional) Cheese slice (optional) How to make Hidden Veg Beef Burgers Add all ingredients into a large mixing bowl and mix well (you can use a spoon or your hands). Preheat grill to a medium heat. Use your hands to make the beef patties. Roll into a ball and squash flat! Place on a grill pan and grill for approximately 15 minutes. Turn once half way through cooking. Chop in half to check they are cooked. To Serve: Add cheese and grill for another minute or so if desired. Serve in a burger bun with some delicious home-made coleslaw. HINTS & TIPS They can be cooked on the BBQ, in a frying pan or the grill! You can also make extra and freeze for another day? (Use foil/greaseproof paper to separate them before freezing). Defrost before cooking and ensure they are cooked through. Sweetcorn or mushrooms work well in the mixture too. Why not add some chilli flakes for some heat? 'Lighten up' this recipe and serve with a wholegrain bun.
