This is a great recipe for batch cooking and using up vegetables that need eating. Can be topped with white or sweet potatoes and is comfort eating at its best.
Makes approximately 4-6 servings
Preparation time is approximately 25 minutes
Cooking time is approximately 20-25 minutes

Ingredients
500g beef mince
1 onion, diced
2 cloves of garlic, crushed & diced
2 carrots, peeled & diced
1 courgette, diced
2 handful of frozen peas
2 tablespoons of tomato puree
500ml beef stock (gluten free if necessary)
2 tbsp Worcestershire sauce or Henderson's relish as a gluten free alternative (optional)
500g potatoes ( white or sweet), mashed
1 tablespoon of olive oil
How to make your cottage pie
Add oil to frying pan and gently fry onions and garlic for 5 mins until softened. Add beef mince and cook until browned.
Add carrots, courgette and peas to pan along with tomato puree. Stir and add beef stock and simmer for 20Â mins until carrots soften.
Add beef mixture to oven-proof dish and top with mashed potato. Cook in oven for 25 mins until bubbling.
